Peanut Butter and Yumminess

So while the professional baker was in town (my mom) I decided to jump face first into this little recipe for Chocolate Peanut Butter cupcakes with Peanut Butter frosting...dipped in chocolate of course. Sounds easy right? Well at first glance it is, but throw a 5 month old and a sleeping husband and a dog that won't stop peaking around the corner and things can get a little complicated. In other words, they came out a bit overdone. No worries though, cover it in peanut butter frosting and all your worries go out the window. :) the original plan was to bake these for an up coming cookie exchange, but these are not give out worthy, so on to something else... Key Lime Cupcakes


I had a wonderful time tonight making these little treats! They were fairly easy and I found a great tip in adding the graham cracker "crust" to the top!
Enjoy! Here's the recipe, If I could change a few things it would be to add 4 TBSP of lime juice and a little more self rising flour and a little less all purpose... but these were still delicious!



Ingredients
CUPCAKES
•1 cup all purpose flour
•3/4 cup self-rising flour
•1/2 cup (1 stick) unsalted butter, room temperature
•1 1/4 cup sugar
•2 large eggs
•2 1/2 tablespoons fresh lime juice
•1 tablespoon finely grated lime peel
•1/4 teaspoon neon-green food coloring
•3/4 cup buttermilk
FROSTING
•1 8-ounce package cream cheese, room temperature
•1 1/2 cups powdered sugar
•1/2 cup (1 stick) unsalted butter, room temperature
•1 tablespoon finely grated lime peel
•1/2 teaspoon vanilla extract
Preparation
CUPCAKES
•Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
•Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.
FROSTING
•Beat all ingredients in medium bowl until smooth. Spread over cupcakes.

For Christmas Cards! I did a trial run of a few I am going to use for our family Christmas Cards. Unfortunately my son will have to grin and bare it for another round soon, as I have some more ideas. Please still love me Eli!

Cupcakes, cupcakes, cupcakes!!!


So my new found and hopefully temporary love is making cupcakes! So far I have only ventured into making 2 types; lemon cupcakes with lemon buttercream frosting and tonight I indulged into Red Velvet cupcakes with Cream Cheese frosting. Yum. Both have come out delicious and because I usually end up with 30 or so, the neighbors are loving me.
Now, I don't know why I have centered my world around cupcakes, I figured it's because I am dieting and it's my way of still loving food even though I can't really enjoy the taste. Lol.

At any rate it does relax me at the end of the day, and my husband has been a lot more happy. It's a win, win situation if you ask me.

Airplanes plus hunting equals love







We took Eli on his first plane ride to Indiana at the beginning of this month, and he was a champ like always! A little frightened at first, but he got over it!





He slept through most of the flights and I found out how convenient breastfeeding actually is, oh screaming?! nope I have a boob for that! And like most men he was quiet the whole time ;)

Alright I could post up 100 more photo's and maybe I will later but those were some of my fav's. I cannot wait to move back up there and be around the 100's of people who love our little (big) man! This kid deserves the best, and the best is what he is going to get! Goodnight!

Pumpkin patch kid



We took Eli out for his very first pumpkin picking! Although we did most the debating on which one would be perfect enough for him... He was kind of grumpy so setting him down to get the cute pictures wasn't happening lol.


Everytime we go out we do the guessing game when people ask us how old he is, most the time we get 6 months? 7 months? I love it, no people he is 16 weeks, then their mouths hit the floor and I'm sure they think I am over feeding him or something else not right, or maybe that's my critical thinking taking over :) Either way it's our fun game.
